Justino’s Salsa Verde

At our FIG Social Club last night I received a ton of compliments on my salsa so I thought I would give the recipe out so you can enjoy it at home.

2 lbs. tomatillos (peeled, washed & halved)
1 Spanish Onion (peeled and quartered)
4 Cloves Garlic
1-3 Jalapenos (Depends on the heat you like and the heat of the chilies)
1/2 Bunch Cilantro (remove the leaves and toss the stems)
2 C.Tortilla Chips (preferably El Ranchero Green Bag)
1 Lime
1 C. Salted, Toasted Nuts (almonds, pistachios or pecans)
Salt and pepper to taste

First, place the tomatillos, garlic, onions & into a medium sauce pan and cover with water. Place on the stove, add 3 T. salt and simmer for 25-30 minutes. Once finished remove everything with a slotted spoon and place them into a blender. Keep the water as you will use it later to get the right texture. Add everything else and blend, adding water to reach your preferred texture. Taste and add salt and pepper to season. That’s it, super simple.
